Who can participate?
The competition is open to all oil producers or bottling organizations, approved by the competent local authorities.
Moreover, filling the registration form binds the producer to accepts obligations. In particular, he must be a member of the association to fulfill his contribution, and send samples in time, under the conditions defined on the registration form where he allows AVPA to mention its possible medal.
A technical and hedonistic professional competition
The competition takes place in two main steps
In a first phase, the products are tasted, analyzed and classified by a jury of professionals.
Goal: to keep the "best" products in each category according to its criteria.
In a second phase, the products are presented to a taste panel of enthusiasts (mainly gourmets and prescriptors) who contribute in the final classification of the competing products and award the medals.

How to compare what is not comparable?
In all its competitions, AVPA aims at organizing the tasting universe. Products are classified by similarity of taste.
Products with similar organoleptic profiles will be classified in the same category by the "napping" or "free sorting" method.
It is possible that this classification overlaps agronomic classification by geographical varieties, or regional identity, but the AVPA classification based on tasting generally yields a better approach to the reality of taste range, without preconceptions or bias, and giving the opportunity to all interesting peculiarities to express themselves..

The Gourmet Paris medals
The products selected in each category are awarded a medal "Product Gourmet Paris"; the best in their categories may then obtain, according to their merit, the Gourmet Gold, Silver or Bronze Gourmet Medal.
The AVPA jury
The originality of the competition AVPA resides in the quality of its jury.
The tasting panel consists of industry professionals, chefs (some of which are starred), and informed amateurs. They rely on a regulation that is available on request. Jurors taste products with rigor and seriousness in order to determine which products are the most interesting.
To ensure consistency of language and cultural reference, the jury's culture and members are French.
